Cooking with Grass-Fed Beef

Grass-fed meat behaves differently than conventional grain-fed beef when heat is applied for cooking. To quote Jo Robinson from her book Pasture Perfect, "When meat has little fat, heat is conducted more quickly and can toughen the protein. To keep grass-fed meat tender, cook it more slowly and at lower temperatures." More information on cooking and many recipes are available in her book Pasture Perfect. We highly recommend reading this book.
It can be ordered on-line at her website: www.eatwild.com. Another excellent cookbook is The Grassfed Gourmet cookbook by Shannon Hayes.
